Для того, чтобы поменять стандартную тему курсора, нужно ее сначала установить, если у вас уже все установлено, пропустите этот шаг.
Итак, устанавливаем одну или несколько из следующих тем: crystalcursors dmz-cursor-theme xcursor-themes comixcursors Chameleon-custor-theme Big-cursor
Для примера, установим мою любимую - DMZ.
aptitude install dmz-cursor-theme
Ну а теперь, надо задать её по-умолчанию или «по-дефолту»,
update-alternatives --config x-cursor-theme
Выведется длинный список с уже установленными темами и нам потребуется ввести число, соответствующее нашей, введем и возрадуемся. Вот как это выглядит:

Для Ubuntu, основанной на Gnome 3, например 12.04, придется проделать еще парочку операций.
Установите dconf-editor:
sudo apt-get install dconf-tools
Зайдите в него, чтоб иправить опцию cursor.theme в пункте org.gnome.desktop.interface
